The producer
Santo Wines is the cooperative of Santorini, founded in 1947 and uniting most of the island's grape growers. The cooperative produces Assyrtiko from Santorini's distinctive volcanic soils, where vines are trained in basket-shaped "kouloura" formations to protect against the strong Aegean winds.
