Sensis is Cava d’Onice’s Brunello drawn from several Montalcino parcels. As a style guide, expect Sangiovese’s cherry fruit and dried-herb character, carried by refreshing acidity and a firm, dry tannic frame. This is a savory food wine, distinct from the estate’s more narrowly selected bottlings.

The producer

Cava d’Onice is a family-run Montalcino estate managed by Simone and his wife; Simone learned vineyard work alongside his father, a longtime local cellar master. Its namesake Brunello debuted in 2005, and its name recalls an ancient Etruscan onyx quarry near the Abbey of Sant’Antimo.
