The producer
Cava d’Onice is a family-run Montalcino estate managed by Simone and his wife; Simone learned vineyard work alongside his father, a longtime local cellar master. Its namesake Brunello debuted in 2005, and its name recalls an ancient Etruscan onyx quarry near the Abbey of Sant’Antimo.
